The Journey of Our Sourdough Starter
The sourdough starter we use in our pancake preparation was brought directly from Santa Cruz, California!
This is not just a recipe, it is a living culture, and we have nurtured it with the utmost care since our arrival in France to guarantee the unique flavor you love so much.
But what exactly is sourdough?
Sourdough is a natural leavening agent, quite different from industrial yeast. It is a fermented mixture of flour and water, rich in microorganisms (wild yeasts and lactic acid bacteria).
Its role? It "eats" the sugars in the flour and produces carbon dioxide, which makes the dough rise and gives it its airy texture.
Its advantages? It gives our pancakes a slightly tangy, more complex and richer flavor, as well as better digestibility.
Our Californian sourdough starter is therefore much more than just an ingredient: it is the heart of our pancakes, a tradition that we cultivate and share with you here at Casa Good Vibes.
